Opulent Chicken (Serves 8)
8 skinless boneless chicken breast
3 small cans of cream of chicken soup
1 cup of sour cream
1 tablespoon of lemon juice
10-12 Swiss cheese slices
2 cups Ritz Cracker Crumbs
½ cup melted butter
White Rice
Lightly grease the 13” x 9” Pyrex dish
Place clean chicken breasts on bottom of the pan.
Cover the chicken with Swiss cheese
In another bowl, mix together the cream of chicken soup, sour cream and the lemon juice.
Cover the chicken and Swiss cheese with the soup mix
Melt the butter
Mix the Ritz Cracker Crumbs with the butter
Sprinkle over the sauce
Bake uncovered at 275° for 3 hours
Make Rice (I use the success rice that boils in the bag for 10 minutes)
Serve on top of Rice
