PEACHES & CREAM FROZEN SUMMER DELIGHT PIE





INGREDIENTS:
1 can (14 ounces) sweetened condensed milk
7 Tablespoons peach nectar
A couple drops red food coloring (optional)
1 drop yellow food coloring (optional)
1 ¾ cups heavy whipping cream, whipped
1 cup whipping cream, whipped (for garnish)
Pink and white sugar pearls for garnish
1 shortbread crust (9 inches)
DIRECTIONS:
In a large bowl, combine the sweetened condensed milk and peach nectar.  Mix well.  Add a couple red food coloring drops and 1 drop of yellow food coloring and mix in.  (food coloring is always optional anyway)   

Whip 1 ¾ cup whipping cream. Fold a fourth of the whipped cream into watermelon mixture; fold in remaining whipped cream.  Spoon into crust.   

Whip 1 cup of whipping cream.  Refrigerate and reserve for garnish.


Remove from freezer 10-15 minutes before serving.  Garnish with the reserved whipped cream and the pink and white sugar pearls.

FROSTY WATERMELON PIE



INGREDIENTS:
1 can (14 ounces) sweetened condensed milk
6 Tablespoons Watermelon Juice
6 teaspoons Watermelon Torani Syrup
A couple drops red or pink food coloring (optional)
1 ¾ cups heavy whipping cream, whipped
1 cup whipping cream, whipped (for garnish)
1 drop green food coloring (for whipping cream to look like watermelon rind) (optional)
Licorice nibs (cut into slices to look like watermelon seeds)
1 shortbread crust (9 inches)
DIRECTIONS:
In a large bowl, combine the sweetened condensed milk, watermelon juice and watermelon syrup.  Mix well.  Add a couple red or pink food coloring and mix in.  (food coloring is always optional anyway)   

Whip 1 ¾ cup whipping cream. Fold a fourth of the whipped cream into watermelon mixture; fold in remaining whipped cream.  Spoon into crust.    Scatter the cut licorice on top of pie. Cover and Freeze over night.

Whip 1 cup of whipping cream and whip in the green food coloring.  Refrigerate and reserve for garnish.


Remove from freezer 10-15 minutes before serving.  Garnish with the reserved whipped cream.

WATERMELON SLUSHY


INGREDIENTS:
1 ¼ cups watermelon juice
3 cups crushed ice
Up to 6 tablespoons sugar

DIRECTIONS:

In a blender combine the crushed ice, watermelon juice, and sugar.  Blend until it is smooth and slushy.  Serve with a straw or a spoon/straw.

POWDERED PEANUT BUTTER AND CHOCOLATE SMOOTHIE


Ingredients:
¼ cup Almond Milk
2 cups plain Greek yogurt
9 tablespoons chocolate powdered peanut butter (chocolate PB2)
6 tablespoons sugar

Directions:

Mix all ingredients in a blender and blend well.  Pour into a tall glass and enjoy.  For a frostier treat, freeze for about 1 hour in the freezer.

PEANUT BUTTER COOKIE DOUGH BITES


Ingredients:
½ cup butter, softened
1 cup peanut butter
2/3 cup sugar
2 dashes of salt
1 teaspoon vanilla powder or vanilla extract
1 ½ - 2 teaspoons Watkins peanut butter extract – to taste, optional (I found it at Walmart)
1/3 cup whole wheat pastry flour
1 ½ cups all purpose flour
1 cup steel cut oats, (rolled oats will work, too)
½ cup mini chocolate chips

Directions:

Mix the butter and peanut butter until smooth and creamy.  Add the sugar, salt, peanut butter extract (optional) and vanilla.  Mix well.  Mix in the flours.  Mix in the oats, then mix in the chocolate chips.  Roll into 1 inch balls.  Store in the refrigerator.  Enjoy.
