BACON, AVOCADO & CHICKEN CROISSANT SANDWICH


Ingredients:
Croissant (from Costco)
Rotisserie Chicken Breast (from Costco), or just chicken breast
1 avocado sliced
2 slices bacon
Sandwich spread of your choice, optional

Directions:
Slice the chicken, slice the avocado, cook the bacon (remove the grease) and slice the croissant in half.   Add the sandwich spread to the croissant (optional).   Layer the avocado, then the chicken then the bacon.  Serve and Enjoy.

FRIED RICE FOR THE PICKY DINER



Ingredients:
2 cups Brown Rice
5 - 10 strips Bacon (crumbled)
1 pack Green Onion (chopped)
3 eggs
Garlic Herb Mrs. Dash (a few dashes – season to taste)
Pepper (I use Rainbow Peppercorns from Trader Joe’s – season to taste)
(cooked frozen peas, optional)

Directions:
Cook brown rice as directed.  Microwave bacon until really crunchy.  Crumble bacon (I use the electric food chopper).  Chop Green Onion (I use the electric food chopper).
In a large sauteuse pan, brown rice.  Add crumbled bacon.  Add eggs and immediately scramble and stir.  Fry until eggs are cooked.  Season with pepper and Mrs. Dash.  Add green onion.  Stir in peas, if desired.  Serve very warm.

GRILLED CHEESE SANDWICHES




10 pieces of Orowheat Buttermilk Bread, or your favorite bread
Grated Cheddar Jack Cheese or Reduced Fat Cheddar Cheese
Melted Butter
Ketchup (optional)
15 cooked Bacon Strips (optional)

Get out and plug in the griddle.  Place 5 slices of bread around a place.  Place 5 more slices on top of each.  With a pastry brush (I use a silicone one)brush melted butter on top side of 5 of the bread slices.  Place those butter side down on griddle.  Build your sandwich with desired  amount of grated cheese.  Butter remaining 5 slices.  Place butter side up on each sandwich.  Turn on Griddle to 350 degrees.  Let the cheese melt and  lightly brown on each side of bread.  Serve piping hot.    Makes 5 sandwiches

Optional – Dip into ketchup.

Variation:  place 2 bacon strips between slices of bread for a cheesy bacon sandwich.
